MY DREAM

This dream was of a disconcerting precision:
I developed three activities around my passion: the #cooking. The premises of this company were located in a lighthouse. This lighthouse was located on a tip or cliff in the United States. On the ground floor there was a bookshop containing cookbooks from all over the world; on the 1st floor, there was a kitchen and I animated classes of #TraditionalFrenchCooking; on the top floor was a french restaurant whose specialty was breton crepes.

 

This dream contained all the details: the smells, the layout of the premises, the #recipes, the schedules,...

 

That morning, when I woke up, I told myself that life was made to realize his dream.

MY PLACE

So I've been working on this crazy project!Since that day, I spend all my summers in the United States to find the place of « my dream»: patiently and methodically, I began by identifying the state that most resembles the sensations and the moods of my dream. It's very big the United States: after having traveled and smelled!!! Arizona, Nevada, Colorado, Florida, Louisiana, Texas, Mississippi, Hawaii, New York, Washington DC; It was #California that caught my attention.

 

So I spent a summer in California to spot the city or place of my dream. This exciting stage was difficult as there were places gathering several criteria: the atmosphere, the conviviality, the #culinary and #wine culture... as in San Diego, Monterey or San Francisco. But the place for which I had a love at first sight is #SantaBarbara: I do not even know if there exists in France a city gathering as much #gastronomic and wine culture. Santa Barbara meets all the criteria of my dream.

MY TRAINING

Since 2011, in order to improve my knowledge and skills in œnology, I took #œnology courses with professionals from Montpellier, I participated in several wine tourism circuits in the main regions of France but also in Italy and of course in California. This allowed me to discover the different grape varieties and the different vineyards. The idea is to be able to offer my customers the best combination of wine and food.

 

Since 2011, I have worked on the recipes of traditional french cuisine in order to « Americanize » them. Beyond converting all the units of measurement (weights, temperature degrees...), the idea was to convey to the American amateurs of french cooking the ways of doing #french housewives. Indeed, french cuisine is a family tradition, transmitted from parents to children: it is this cuisine that I wish to share as my mother taught me, as I showed my sons. It is not an academic kitchen but a way of cooking with the means of the kitchen of « Monsieur or Madame
everyone » and with the little tricks of our grandmothers. Since 2011, I have completed my culinary skills by taking courses with french chefs, documenting myself and testing several recipes for the same dish: my children were delighted to test four differents recipes of Cassoulet!

MY PROJECT

In 2017, after six years of work, after having determined to whom I wanted to offer my services, after having determined the place, the content and the concept of my culinary workshops, I had to plan when I was going to jump!  My first company, SOLUTIONS Ressources Humaines, was fifteen years old.

 

I was fifty years old! It was time to have fun and give culinary happiness to people. I created the activity « Bon Appétit » within the other activities of HR SOLUTIONS. Thanks to all these years of work, SOLUTIONS RH was going to export its activity « Bon Appétit » in California.

 

In 2018, I ran my 1rst culinary workshops thanks to 3 business bearer I hired ! More than that, Dona, Heather and Thomas are Bon Appétit’s Ambassador in California and Washington. Thanks to them I go more and more to Santa Barbara to share some good moments with people who like french food, french wine and french traditions !
